How to Braai Boerewors the Proper Way
A South African birthright in eight steps — coals, patience, and never, ever a fork.

There are a hundred opinions on how to braai. There is also one correct way, and we are going to share it with you.
Start with coals, not flame. Light a good chimney of hardwood lump charcoal and wait — properly wait — until the glow is even and the surface is dusted white. If you can hold your hand at grate height for four seconds, you are ready.
Lay the coil flat. Our boerewors comes in a single spiral; keep it that way. Run two long skewers through it at right angles so it doesn't unravel when you turn.
Turn it once. That's it. Three to four minutes a side for a fat coil, until the casing is taut and the colour is deep mahogany. A fork is a small betrayal — use tongs.
Rest for five minutes on a warm plate. Slice into thumb-length pieces and serve with a soft white roll, a sharp tomato and onion sambal, and somebody you love.
